The small shallow bay in Florida's panhandle, between Apalachicola and St. George Island, produces some of the finest oysters found in the country. During the nine month season, oystermen still use 16-foot-long "tongs" to pry the oysters from their beds. The average oysterman, can catch some 20 bags or bushels a day.
